It’s ridiculously cold out, and the sight of 10-foot piles of dirty snow, from the recent snow-apocalypse, that welcome me outside my door does not make me want to leave the comforts of my apartment, or from under my comforter, for that matter.  But, I must … at least from under my comforter.

You see, I’m hungry.  I’ve tried to ignore it for 2 hours now, but that’s the thing about hunger, it’s an unrelenting beast.  And, I don’t know how to tame it.

Finally, I compromised with myself – I will not leave my house, just my comforter.  So what can I make with what I already have at home?

Chili!  I’m a genius.

Easy Chili Recipe

Makes 8 servings
Prep Time: 15 minutes
Total Time: 1 hour 15 minutes
  • 2 pounds ground beef (or turkey)
  • 1/2 onion, chopped
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic salt
  • 2 1/2 cups tomato sauce
  • 1 (8 ounce) jar salsa
  • 4 tablespoons chili seasoning mix
  • 1 (15 ounce) can light red kidney beans
  • 1 (15 ounce) can dark red kidney beans
  • 1 tablespoon of Tabasco sauce (optional, I like the kick)
  • Sour cream (optional)
  • Shredded cheddar cheese (optional)
  • Green onion (optional)


  1. In a large saucepan over medium heat, cook the ground beef until it starts turning brown.  Drain grease, if desired.
  2. Add chopped onions and saute for 5 minutes, or until the onions are cooked and the beef is brown.
  3. Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix, kidney beans, and Tabasco sauce.  Mix well.
  4. Reduce heat to low and simmer for at least an hour.  Stir occasionally.
  5. When the chili’s done, top with sour cream, cheddar cheese, and green onion.
  6. Eat.  I told you it was easy.
  7. Return back to the comforter – it might still be warm.  :)
