Baked Honey Butter Curry Chicken

I’ve been making this Baked Honey Butter & Curry Chicken for quite some time now.  Butter, honey, curry and dijon mustard – who would have thought this combination would be so delicious (and easy to boot!).

You can use any portion of the chicken, but I personally like dark meat, particularly, legs.  I’m a drumsticks fan (I enjoy eating with my hands … how uncouth of me).

I like to pair this Baked Honey Butter & Curry Chicken with some baked Parmesan Asparagus, which was also quick and easy.

First,  you make the glaze/marinade mixture for the chicken, which comprises of melted butter, honey, mustard (I like dijon), curry powder, and salt.

Lay out your chicken pieces in a pan. 

Pour the butter/honey/mustard/curry mixture evenly on the chicken.   Now, throw them in the oven.  That’s it!

It can’t get any easier than that, can it? 

While the chicken is baking.  I rinse the asparagus, cut off an inch off the ends (those tend to be old and hard to chew).  Toss it with some olive oil, and in the oven they go too!  When the asparagus comes out of the oven, toss it with some parmasan and garlic salt.

Easy peasy, right?

Chicken’s done!  Mmmm.

Baked Honey Butter & Curry Chicken

Makes 6 Servings
Prep Time:  15 Minutes
Cook Time:  1 hour 15 minutes
Total Time:  1 hour 30 minutes

Ingredients

  • 3 pounds chicken pieces
  • 1/2 cup butter, melted
  • 1/2 cup honey
  • 1/4 cup dijon mustard
  • 1 teaspoon curry powder
  • 1 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place chicken pieces in a shallow baking pan, skin side up.
  3. Combine the melted butter, honey, mustard, curry powder and salt together in a bowl.
  4. Pour the mixture evenly over the chicken pieces.
  5. Bake for 1 1/4 hours, basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear.

Parmesan Asparagus

Prep time:  5 minutes
Cook time:  15 minutes
Total time:  20 minutes

Ingredients

  • 30 medium fresh asparagus spears, trimmed
  • 4 tablespoons olive oil
  • 3 tablespoon grated Parmesan cheese
  • 1/2 teaspoon garlic salt

Directions

  1. Place asparagus on a baking sheet.
  2. Brush asparagus spears with oil.
  3. Bake uncovered at 350 degrees F (175 degrees C) for 6 minutes.  Then turn asparagus.
  4. Bake for another 6 minutes until asparagus is tender.
  5. Combine Parmesan cheese and garlic salt, and sprinkle over asparagus after removing from the oven.

Thanks for the awesome recipe! It was scrumptious. I added just a splash of pale ale, chipotle, and garlic and it turned out beautifully!
